Paradoxically, mint is warming for the digestive system according to Chinese medicine so the benefit is two-fold. You feel cooler but your digestive fires are primed to break down and absorb all of the healthy whole foods that are along for the ride.
Who doesn’t love a little lime with coconut? Waste no more time and blend away!
Go organic! Makes one serving.
- 1 cup full fat coconut milk
- 10 – 15 fresh mint leaves
- A squeeze of lime
- Handful of spinach
- 2 medjool dates or 1 Tbsp coconut sugar
- 2 tsp hemp hearts
- ¼ cup filtered water
Blend until smooth and chill out.
